A Simple Weeknight Recipe: Parchment-Baked Seabass with Spinach


Parchment-Baked Seabass with Spinach

This flavor-packed meal is complete in under 20 minutes and is less than 500 calories!

Preheat oven to 400° F. Place a 6-ounce seabass fillet (can substitute other white fish like cod, halibut or barramundi) on one end
of a rectangle shaped piece of parchment paper.
Drizzle with 2 teaspoons olive oil and sprinkle with 1/8 teaspoon sea salt and black pepper. Top with 2 sprigs rosemary and 2 thinly sliced orange slices. Carefully roll the fish in parchment paper (like a burrito) and tuck edges under the fish. Transfer to a baking sheet and bake for 15 minutes. While fish bakes, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the 2 cups baby spinach with a pinch of sea salt and black pepper. Cook, tossing, until just wilted, 1 to 2 minutes. Carefully slit fish packet open and serve with the spinach and remaining orange slices. Makes 1 serving.
